Did you ever try meat and carrots cupcakes? No? Then,  you are in the right place!  I am ready to give you the best recipe….( According to Wikipedia is a small cake designet to be eaten by one person) And, when you want to prepare a ground meat dish for lunch or dinner would be tasty for kids also, simple and easy to make, you “go online,” Pinterest, etc.

There are so many choices and kinds of recipes. Also, different types of spices and ingredients or seasoning to add. And the base is beef. But what about beef and pork mixed? And, what can we prepare from it? Goulash? No, there are many steps and takes longer to make. Or, meatloaf? No, it takes too long. What about meat and carrots cupcakes?It  takes prepare only 30-40 minutes from beginning to end. Also, simple to make and tasty to eat for kids and adults.

But why do we need to mix beef and pork? The answer is straightforward: mix meat becomes more robust (better texture), soft and juicy also, tender: especially when we add vegetables: carrots or potatoes, even squash or pumpkin. Zucchini is the right choice too.

I like to prepare meat and carrots cupcakes for my grandkids. They don’t like vegetables to eat so, and I hide them in the meat. By the way, the size of the cakes is perfect, it is not too small and not too big.  And, they can hold and pretend they are eating sweet cupcakes. Also, the ideal size of meat and carrots cupcakes for lunch even for weekend parties as appetizers.

But the most important thing: they are amazingly simple to prepare.

Preparation time: 15 min

Total time: 30 – 40 min

Servings 4 – 6

         Meat and carrots cupcakes


                                   First, we need:

Beef 1.5lb

Pork 1.5lb


Eggs 2 large


Broth 1 cup


Onions 0.7 oz ( chopped)

Garlic 1 clove

                              In addition:

Seasoning 1 tsp

Salt a pinch


Black pepper a pinch


Carrots 0.5 oz ( grated)

                           Also, you need:

A cutting board, knives and, four different sizes of bowls.  Also,12 cupcake pan. ( 8 or 6)

       Workflow for meat and carrots cupcakes

First, beat the eggs.

Second, chop onions and garlic.

Next, mix beef and pork.

Then, add seasoning, salt, and black peppers to the meat.

After that, add chopped onions and garlic. Also, beaten eggs and broth. Mix very well for a good two minutes.

Finally, add grated carrots and mix well.


TIP: mixing the meat well and other ingredients make the meat tender.

TIP: adding broth makes the meat juicy.

TIP: beaten eggs make the meat softer.

TIP: you can substitute carrots with other kinds of vegetables: potatoes, squash or pumpkin also zucchini.

           Forming the cupcakes

When you mix the meat well, make a ball. Take a little bit of meat and form a ball. Put that ball to the pancake pan. Fill in all pan holes.

Then, preheat oven to 450F and bake for 15 – 20 min.


TIP: dip fingers in the water when you make balls; otherwise, the meat will stick to your fingers.

TIP: you don’t have to use a 12 cupcake pan. Just substitute with 8 or 6. Then you need to bake cupcakes a little longer ( around 5 -7 min. longer)


First, place the meat and carrots cupcakes on the plate and add boiled potatoes ( mashed or french fries is a good option too). Also, if you don’t like potatoes than switch to white or brown rice.  Then, add vegetables: coleslaw and green beans or sweet peas even asparagus. I like to serve meat and carrot cupcakes with tomato-cucumber salad.

                                you need:

Tomatoes         1 medium size

Cucumber          2 medium size


Onions         0.3 oz. (chopped)

Salt                 a pinch

Black pepper     a pinch ( ground)

                           In addition:

Olive oil        drizzle ( any oil is OK)


Italian dressing


Sour cream( drizzle)


First, cut tomatoes in squares

Second, slice cucumber

Then, add chopped onion and pinch of salt and ground black pepper.

After that, mix everything.

Finally, drizzle sour cream and mix again.

TIP: if you don’t want to use sour cream, substitute to Italian dressing you don’t need to add salt and peppers.

                            In conclusion:

In short,this recipe is basic. To clarify, you can create adding ketchup on the top or even use BBQ sauce. Also, cheese is a perfect choice too. Usually, I use American yellow cheese.

Also, I like to switch around different kinds of spices: basil and cumin, or curry powder. I like oregano and parsley as well. You can even add a pinch of cayenne pepper ( for spicy food lovers).
